Tart 'n' Sweet Fresh Spinach Salad

  • 3 slices Bacon    
  • ¾ c + 1 T Sugar   
  • 1 c Vinegar  
  • ¼ t Salt    
  • 2 lg Eggs-slightly beaten                        
  • 1 ½ -2 lbs Fresh Spinach

 Fry bacon until crisp.  Save bacon fat (measure 1/3 c).  In bowl, combine bacon fat, sugar, vinegar, and salt.  Beat in eggs with a whisk. On very low heat, stirring constantly bring mixture to a boil.  Cook 1 to 2 minutes.  Remove from heat.    Dressing can be used hot or cold.  If using right away, wash spinach thoroughly and tear into bite-size pieces. Sprinkle greens with bacon.  Add dressing, toss, and serve immediately.
