Beets and Sauteed Beet Greens

1 bunch beets with greens

2 cloves garlic, minced

2 Tbsp chopped onion

Salt and pepper, to taste

Balsamic Vinegar (optional)

Step One: CLEAN & PREP. Remove greens from beets and set  aside.  Wash beets thoroughly by scrubbing them in water.  Do not peel.

Slice the beets into  ¼ inch thick slices.

Step Two: COOK BEETS & BEET GREENS. Saute onion and garlic in oil for a few minutes.  Add beets tossing in the pan until coated with oil. Add ¼ cup to ½ cup of water to pan. Cook over medium to medium high heat until water comes to a boil.  Reduce heat, cover, and simmer.

While beets are cooking, chop the beet greens into 2-3 inch pieces.

Cook beets for 25-30 minutes, or until fork tender.    Add greens to beets right at the end of cooking time. Cook and stir until greens are wilted and tender, about 5-7 minutes.

Step Three: SERVE & ENJOY! Serve with salt, pepper, and butter or drizzle a little balsamic vinegar over the top.
