- 1 bunch of beets
- 1 Tbsp olive oil
- ½ tsp salt
- ½ tsp freshly ground black pepper
Preheat the oven to 400 degrees.
Step One: CLEAN the beets: remove the tops and the tap roots of the beets. Scrub them well with water.
Step Two: PREP the beets: Cut the beets into 1 ½ inch chunks. (Small beets can be halved.)
Step Three: SEASON & ROAST the beets. Put the beets on a baking sheet and toss with the olive oil, salt, and pepper. Roast for 35-40 minutes until beets are tender, stirring the beets with a spatula once or twice during the cooking time.
Step Four: SEASON ADDITIONALLY & ENJOY! Sprinkle with additional salt and pepper to taste. Serve warm.
Try sprinkling the cooked beets with balsamic vinegar or orange juice!
What do I do with beet greens?
- Mix them in with other salad greens.
- Wilt them and serve them with the cooked beets or by themselves with butter, salt, and pepper.
- Add them to your smoothie.
